The only botrytised wine produced in Sicily, made from Grillo. Late harvest by hand between October and November, selecting only the most suitable berries affected by noble rot.
Grape: Grillo
Winemaking: Ages for 1 year in stainless steel on lees, followed by 2 years in new French oak barriques, and finally 1 year in the bottle before release.
Tasting notes: A delicate but complex bouquet. Floral notes of orange blossom and jasmine, followed by saffron, and a final honeyed touch. Also dehydrated apricot, candied cedar, pine nuts, toasted hazelnuts, and acacia honey. Harmonious and pleasant palate, with aromas of honey and tropical fruit that persist beautifully. Despite its luscious sweetness, it maintains a fresh, iodized, and savory character, never excessively round, stretched toward a long finish supported by acidity and marine sensations.
