The "Méthode Ancestrale" is a fermentation technique that produces a sparkling wine without the addition of any yeast or sugar. The fermentation process is entirely natural, relying solely on the yeasts and sugars contained in the grapes.
The first phase takes place in thermo-regulated tanks, where fermentation begins. After a light filtration, the wine is bottled, and fermentation continues, producing the bubbles and the fine foam.
